Food suggestions
High natural fatty foods such as salami, salmon, anchovies, or olives. Raclette & chorizo on toasted sourdough. Roasted duck breast with orange and fennel, wild leaves, and negroni emulsion.

Vinification
The use of a basket press results in lower juice yield when pressing the grapes for our classic white blend, and a lot of juice remains in the skins after pressing. Instead of disposing of the skins, we place them in a bin to ferment. Each cultivar was fermented separately and allowed to develop its individual character. The fermentation was completed on skins with a daily punch-down to keep the cap wet. It took 10 days to complete fermentation and was then pressed into old French oak barrels to age. The wine is unfiltered to ensure maximum mouth-feel and flavour.
Ageing potential
The wine is drinking well now and will continue to improve in the bottle for another 3 years+.
